Harvest Timeline

Good 100% Extra Virgin Olive Oil starts years earlier.

With the land. With the trees. With how they are treated over time. We do not push for volume. We work within what is possible. Most decisions are made long before olives are picked.

Pruning & Rest

We prune the olive trees so light and air can move through them. This keeps the trees healthy and balanced. The trees rest. We leave the soil alone: no fertilisers, no pesticides.

Spring

Flowering

The trees flower. Not every flower becomes an olive, and that is a good thing. Fewer olives mean more intensity in each one.

Growing & Monitoring

Olives grow and oil forms inside them. Polyphenols and antioxidants develop naturally. We monitor for the olive fly using natural traps, never pesticides. We accept losses when they happen.

Picking & Pressing

We harvest early, when ripe olives give their most intense flavour. Olives are hand-picked, never machine-harvested. Pressed within hours. The mill runs 24 hours a day.
